Adopt a Blogger: Trish from Gluten Free in SLC

I'm taking part in Adopt A Gluten-Free Blogger again. If you’re not familiar, Adopt A Gluten-Free Blogger is a monthly event created by Sea at Book of Yum to help us gluten-free bloggers get to know each other and recreate each others recipes. This month it is hosted by Alta from Tasty Eats At Home. This month, I adopted Trish from Gluten Free in SLC

Both Trish and her husband have Celiac disease.  Trish also is intolerant to casein (just like me).  I love her blog, because (1) she's a fellow Utahn. I live in Logan, Utah, she lives in Salt Lake.  I am always checking her restaurant reviews before heading down to the Salt Lake area. She also has a page devoted to places she shops in Salt Lake, which comes in handy, too; (2) she also has some pretty fantastic recipes...and she loves millet flour like I do. :)



I made her chili colorado the other night for dinner and my boys both absolutely loved the sauce.  My older son proclaimed it was the best sauce for dipping tortilla chips.  And I have to say, it is a pretty dang good sauce, and the beef was so tender it was falling apart.  I ate mine with some quinoa, the rest of the family ate their's with corn tortillas and chips.

Note: In her recipe she cooks it on the stovetop, but made a note at the bottom that it could be done in a slow cooker.  So, I did mine in a slow cooker.  The sauce was super thin that way.  So, I made a roux using 2 tablespoons canola oil and 2 tablespoons millet flour, cooked that for a couple minutes, then whisked in about a cup of the sauce and added that mixture back into the slow cooker...it was perfect that way.

Adopt a Blogger: Danielle from Against All Grains

I'm taking part in Adopt A Gluten-Free Blogger again. If you’re not familiar, Adopt A Gluten-Free Blogger is a monthly event created by Sea at Book of Yum to help us gluten-free bloggers get to know each other and recreate each others recipes. This month it is hosted by Alta from Tasty Eats At Home. This month, I adopted Danielle from Against All Grains

Danielle was diagnosed with Ulcerative Colitis at 22, and after suffering for a few years, decided to take her health in her own hands by drastically changing her diet.  Her blog is perfect for those on gluten-free, Paleo, Primal, SCD and GAPS diets.  Everything is grain-free and refined sugar-free, along with most also being dairy-free.  Her recipes are incredible, so it was hard to choose what to showcase on here.  I decided to go with her Not-a-Grain Bars (gluten-free 'cereal' breakfast bars), which meant I also would get to showcase her Blueberry Preserves, since they are part of the bar recipe.


So, first let's talk about these preserves.  I've been cutting back my refined sugar intake drastically (by the way, I feel so much better without sugar) and have been looking for a good refined sugar free jam recipe.  So, when I came across hers I had to try it.  It is super easy to make, and made just the right amount for me to enjoy.  It would be easy to make a larger batch or to switch up the fruit, as well.  This recipe will definitely be my new go-to jam/preserves recipe from here on out.


 Now let's take a look at these breakfast bars.  Don't they look delicious?  Well, they are definitely delicious.  They put Nutrigrain bars to shame with both taste and nutrition (and the fact that these are naturally gluten free).  These bars a protein packed and only sweetened with honey, so there definitely is no reason to feel guilty about eating them.

 And on top of that, they are kid-friendly.  My little one has been devouring them every day since I made them.  So, they are the perfect snack to add to school lunches or as an after school snack.  Really, this recipe will be made again and again in my house.

Adopt a Blogger: Megan from Allergy Free Alaska

I'm taking part in Adopt A Gluten-Free Blogger again. If you’re not familiar, Adopt A Gluten-Free Blogger is a monthly event created by Sea at Book of Yum to help us gluten-free bloggers get to know each other and recreate each others recipes. This month it is hosted by Sunny from And Love It, Too!. This month, I adopted Megan from Allergy Free Alaska (formerly MAID in Alaska).

I love finding bloggers that are in the same point in their lives that I'm in...We are both 31 year old moms of two kids that are about the same age (she has girls, I have boys).  We have very different health issues, but both our families thrive on living gluten and dairy-free.  And on top of that she has some pretty fantastic recipes.

So, to finish off July (National Ice Cream Month), I'm sharing two of her recipes.  First up is her Orange Creamsicle Popsicles.  The first two times I made this, it never made it to the freezer. And I have to say, it tastes just like an Orange Julius that way.  But, I had to make it again, because my little one requested that I make an orange ice cream. Yeah, I really didn't even get to take pictures before he started devouring his...



Second up, is her Fudgesicles, if you have creamsicles, you have to have fudgesicles, right? My older son loves chocolate, and I mean loves chocolate.  Just today he told me that he wish the world was all chocolate...so, yeah, I didn't get many pictures on the fudgesicles, before he started devouring them, either.



They are both delicious and the perfect replacement to the dairy ones that I grew up with...and definitely a lot healthier.  Both of these recipes have either no sugar or very low sugar in the form of agave or honey.  So, there is no guilt with these treats!




Here's one last photo of the kiddos enjoying their treats....and don't ask me why my older son is wearing a jacket in 95 degree weather--I have no idea!

Vegetarian Chicken Salad for Adopt a Gluten Free Blogger

It's Adopt a Gluten Free Blogger time.  Book of Yum is hosting it, check out the page here.  I chose Kalinda from Wheat Free Meat Free to adopt this time.  I love her blog, she has such great meat free ideas that I love to incorporate into my cooking.


When I saw her vegetarian chicken salad, it was like having a light bulb come on...why had I never thought of using chickpeas in place of chicken?  I had to make some of her salad right then, and I enjoyed it in so many ways...on Schar crispbread, on lettuce, with my pita bread, and straight out of the bowl. :) Every single way I had it, it was amazing.  It is the perfect replacement to chicken salad.



 This salad is light, but filling.  And it is perfect for lunches, brunches, showers, pot lucks...anything really.  Thanks, Kalinda for such a brilliant, healthy idea!

Gluten Free Churros for Adopt a Gluten Free Blogger

This is my first Adopt a Gluten Free Blogger event I've participated in and I've had fun with it.  Kalinda at Wheat-Free Meat-Free is hosting the event this month. I chose Heidi from Adventures of a Gluten Free Mom because her blog is definitely one that I follow and has been so helpful since our diet change a year ago.  She has tons of kid-friendly foods and because her family has multiple intolerances like mine, I don't have to figure out substitutes.  She has her recipes organized so you can easily find recipes that are dairy-free, soy-free, egg-free, etc. Which makes it so much easier for those of us who have extra restrictions. 

I decided to make her Gluten Free Churros because (1) they looked absolutely divine (2) I've really missed churros and (3) These are dairy-free and soy-free!

 Before our diet change I never would have thought to make something like this, I would have assumed it was too hard...but, my word, these came together so fast and were quite easy to make.  The dough, of course, is quite sticky to work with, so I did find that it helped to pipe the churros out onto smaller pieces of parchment paper that could then be used to transfer the churros to the hot oil. I was basically picking up a piece of parchment paper that held 2 or 3 churros and turning it over and letting the churros drop into the oil.

These were amazing freshly rolled in the cinnamon sugar, but if you don't finish them all in one sitting (because you actually have self control, unlike me), then reheat them in the oven at 350F until they are hot.
