Orange Chocolate Chip Cookies

We had this cookbook, Cookies for Kids, when I was little that we used to make cookies from all the time.  One of my favorites for the Citrus Chipsters.  This is the gluten, dairy, and soy-free version of those.  And it definitely was a hit with my boys.



Orange Chocolate Chip Cookies
1/2 cup dairy-free (and soy-free, if needed) margarine, softened
3/4 cup sugar
1 egg
1 tablespoon orange zest
2 tablespoons orange juice
1 teaspoon vanilla
2 cups gf flour blend
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dairy-free chocolate chips

Directions
Preheat oven to 375F. In a large mixing bowl mix together margarine and sugar until light and fluffy.

Add egg, orange zest, juice, and vanilla.  Beat until mixed

In a separate bowl mix together the flour blend, baking soda, and salt. Slowly mix the flour mixture into the butter mixture. Stir in chocolate chips.

Drop dough by spoonfuls onto an ungreased cookie sheet.  Bake at 375F for 10-12 minutes.  Cool on a cooling rack.  Makes ~2 dozen cookies.

  2. yum....the only change I made was 1 1/2c gf sr flour and 1/2c almond meal and no zest. Thanks
