Almond Milk

I started running low on my soy milk today, so I thought I would try my hand in making some almond milk, since I had almonds in the cupboard.  I found the recipe here, but halved it, since it's just me drinking it, and I didn't want to use all my almonds up because I needed them for my bread. Also, you can only do about half in a blender anyway...so here's the halved recipe:

Almond Milk

1/2 cup unsalted, uncooked almonds
3-4 dates
3 cups water

Instructions:

Blend almonds and 1 1/2 cups water. Add remaining ingredients and blend. Strain through cheesecloth.
 
 
 
I like soy milk better, but this helped me stretch my soy milk out longer...it was actually fantastic as a 50:50 mix with my soy milk.

  1. I just realized I was soy intolerant. My grocer was out of soy milk so I bought some almond milk. I loved it. I like it better than soy. Anyway, then when they got soy in I bought another half gallon. Low and behold, I got a bad tummy ache every time I drank it, so it's almond milk forever for me.

    1. My little one is soy intolerant, you can easily make your own almond milk or buy some. We really love the Silk Dark Chocolate Almond Milk and the So Delicious Original Coconut Milk...those two are our favorites. The coconut milk is my favorite for cooking, as well, but the Silk Original Almond Milk works great, too! Good luck, I promise it gets easier once you figure out what you can't have. All of my recipes are gluten, dairy, and soy-free or can easily be adapted to soy-free. Good Luck!
